Lux Dag for Dag is a former michelin starred restaurant that completely changed direction a couple of years ago.

Lux Dag för Dag bares little resemblance to the once Michelin starred restaurant Lux, but in so many ways it is so much better.

The menu is dependent on what was available from the (well sourced) local producers and it is constantly changing, the dishes change more or less every day depending on what has come in to the restaurant from the suppliers.

Lux Dag för Dag must be one of few restaurants that has a special role designated to produce quality which is currently held by Andreas Simonsson.

I really like both the ambiance of the restaurant and the direction that it has taken over te last couple of years.

What we in America have come to know as “Farm to Table” — a relatively new culinary form that emphasizes using only the freshest, most local ingredients — comes naturally to Stockhom-based restaurant Lux Dag för Dag.

The Norström’s — alongside the three other owners of the restaurant, Annette Johansson, Peter Johansson, and Daniel Frick — brought Lux Dag för Dag to life in an old, renovated warehouse on the Stockholm waterfront.

Lux Dag för Dag’s unique take on local sourcing is epitomized by their “Walk Through,” a local market attached to the restaurant where community members can buy daily produce, meat, fish, and other in-season foods.

MoL: What makes Lux Dag för Dag different than other ‘Farm to Table’ restaurants?

LN: We don’t know what other farm-to-table restaurants have, but we have our own meat tenderizer fridge and we have Farmers’ Dinner nights when we invite our farmers, cultivators, fishermen, hunters, breeders, etc., to talk about their products and to present them to customers in a menu that Henrik creates for that one night.

Lux dag för dag came from our old Lux restaurant where we as one of the first restaurants in Sweden worked with local ingredients and Swedish flavors.

Penny & Bill is a gastrobar where we combine food with cocktails which is a new way of doing it, at least in Stockholm.

So I wanted to create something new with this place just as we have with our other restaurants.

I’ve always thought of that as a good way to enjoy a cocktail, but of course I don’t mean like a hard alcohol drink but a well balanced cocktail that compliments the food.

The routine and logistics is a big thing when you’re opening a new restaurant.

Just over a year ago, chefs and former colleagues Henrik Norén and Magnus Villnow realised their dream of opening a small restaurant serving simple, honest, almost exclusively local food where grönsaker (vegetables; literally "green things") are the stars.

A warm, intimate dining room, well-executed classic Swedish food with the odd nod to warmer climes, knowledgeable bar staff and all main courses under £17.
